Ingredients
1 lb Mahi Mahi
1 cup guacamole
½ cup red cabbage, shredded
8 tortillas of your choice
Pineapple & Adobo Street Corn & Peppers Salsa
1 (10oz) bag PuraVida Foods Flame Grilled Adobo Street Corn & Peppers, thawed
4 oz canned pineapple chunks, drained
¼ cup cilantro, chopped
¼ cup red onion, diced
Juice of 1 lime
Fish Seasoning
½ tsp paprika
½ tsp sea salt
½ tsp ground black pepper
¼ tsp garlic powder
¼ tsp onion powder
1 tbsp extra virgin olive oil
1 tsp sea salt
½ tsp sugar

Step 1Preheat grill to medium-high heat and gather all the required ingredients.

Step 2In a small bowl, add PuraVida Foods Flame Grilled Adobo Street Corn & Peppers, drained pineapple chunks, cilantro, red onion, and lime juice. Set aside to marinate for 30 minutes.

Step 3Combine all of the fish seasoning spices together in a bowl. Drizzle fish with olive oil and liberally season with the spice mix. Place fish on grill and grill until the fish releases from the grates easily, approximately 4 to 5 minutes. Rotate the fish and cook for another 3 minutes.

Step 4Assemble tacos by starting with a tortilla, adding guacamole, a piece fish, red cabbage, and topping it off with the pineapple & corn salsa.

Step 5Garnish with a squeeze of fresh lime juice and cilantro. Enjoy!
