Ingredients
1 (10oz) bag PuraVida Foods Flame Grilled Adobo Street Corn & Peppers, thawed
1 large head cauliflower
1 can black beans, rinsed and drained
1 tbsp fresh lime juice
3 scallions, thinly sliced
Spice Blend
1 tbsp ancho Chile powder
2 tsp ground cumin
1 ¼ tsp brown sugar
1 tsp black pepper
1 tsp dried parsley
1 tsp cocoa powder
1 tsp sea salt
½ tsp sugar

Step 1Preheat oven to 400°F, and line a baking sheet with parchment paper. Add all the ingredients for the spice blend to a bowl and mix together. Set aside.

Step 2Cut cauliflower into 1” thick steaks/slices and season with 2 tbsp of the spice blend.

Step 3Place seasoned cauliflower on parchment lined baking sheet and roast in oven for 20 minutes, flipping halfway.

Step 4Make corn and black bean salsa by mixing the thawed PuraVida Foods Flame Grilled Adobo Street Corn & Peppers, black beans, lime juice and scallions in a bowl.

Step 5Top the roasted cauliflower with the corn and black bean salsa and finish with a squeeze of lime juice. Enjoy!
