Ingredients
1 (10 oz) bag PuraVida Foods Fire Roasted Primavera Mistura
4 cups arugula
8 oz burrata cheese
2 tbsp toasted pine nuts
Roasted Red Pepper Sherry Vinaigrette
1/4 cup sherry vinegar
1/3 cup extra virgin olive oil
3 oz roasted red peppers
1 tbsp honey
1 tsp Dijon mustard
1 clove of garlic
½ tsp sea salt
¼ tsp ground black pepper

Step 1Gather all of the ingredients.

Step 2In a blender, add sherry vinegar, roasted red peppers, honey, mustard, garlic, and salt and pepper and blend together. Slowly pour in the extra virgin olive oil until emulsified and reserve for later.

Step 3Cook PuraVida Foods Fire Roasted Primavera Mistura per instructions on the back of the bag and allow it to cool to room temperature.

Step 4Assemble salad by starting with a bed of arugula on a large plate then top with PuraVida Foods Fire Roasted Primavera Mistura and fresh burrata cheese.
Season cheese with salt and pepper and drizzle with dressing and toasted pine nuts. Enjoy!
