Ingredients
1 (10oz) bag PuraVida Foods Flame Grilled Fajitas Rajas
1 bunch kale, stems removed and roughly chopped
8 oz orzo pasta, cooked according to package
2 oz black olives, sliced
1 cup cherry tomatoes, halved
½ cup feta, crumbled
¼ cup fresh parsley, chopped
Mediterranean Vinaigrette
½ cup red wine vinegar
2/3 cup extra virgin olive oil plus 1 tbsp, divided
1 tbsp sugar
2 tsp Dijon mustard
1 tsp dried oregano
½ tsp ground black pepper

Step 1Gather ingredients.

Step 2Make dressing by combining red wine vinegar, mustard, sugar, black pepper, and oregano in a blender. While the blender is on, slowly add in the extra virgin olive oil. Set aside.

Step 3Add kale to a large serving bowl and add 2 tablespoons of the vinaigrette. Massage kale with the vinaigrette until all the leaves are dressed.

Step 4Heat 1 tbsp of extra virgin olive oil in a large sauté pan over medium heat. Add PuraVida Foods Flame Grilled Fajitas Rajas and sauté for 2-3 minutes or until warm. Remove from heat and let cool slightly, and then add to bowl with dressed kale.

Step 5Add cooked orzo pasta, black olives, tomatoes, parsley, and feta. Dress with about 1/3 cup of the vinaigrette and toss until well combined.

Step 6Add extra vinaigrette as needed. Enjoy!
