Ingredients
1 large egg, beaten
2 cups frozen shredded hash brown potatoes, thawed
3 large eggs
1 10 ounce bag PuraVida Foods Vegetable Mélange, thawed
1/3 cup shredded mozzarella cheese
¼ cup shredded cheddar cheese
¼ cup grated parmesan

Step 1Preheat oven to 400 degrees F. Spray 8 muffin cups with cooking spray.

Step 2Combine beaten egg with hash browns and cheese. Season with salt and pepper. Press about ¼ cup potato mixture onto bottom and up the sides of the muffin cups. Bake for 15 minutes or until light golden brown. Remove crusts from oven and let cool slightly.

Step 3Prepare the filling. Whisk together eggs with PuraVida Foods Vegetable Mélange and shredded mozzarella. Season with salt and pepper.

Step 4Spoon filling into crusts and sprinkle parmesan on top. Bake for 5-8 minutes or until a knife inserted in the center comes out clean.
