Ingredients
2 boneless chicken breasts, sliced in half horizontally
salt and pepper
2 tablespoons olive oil
2 ounces brie, sliced
10-ounce bag PuraVida Foods Mediterranean Couscous
4 slices prosciutto
2 small shallots, halved
4 garlic cloves, smashed
1 sprig rosemary
2 tablespoons butter
1/4 cup dry white wine
1/2 cup chicken stock
1/2 cup chicken stock

Step 1Preheat oven to 300 degrees F. Gather the ingredients.

Step 2Season chicken with salt and pepper. Stuff the inside with PuraVida Foods Mediterranean Couscous and slices of brie. Wrap 2 pieces of prosciutto around each cutlet.

Step 3Drizzle oven-safe skillet with 1 tablespoon oil and place chicken in skillet. Arrange shallots, garlic, and rosemary around chicken. Transfer to the oven and roast for 15-20 minutes or until chicken is cooked. Remove rosemary and broil skillet for 1 minute or until prosciutto is crisp.

Step 4Remove chicken from skillet and keep warm. Place skillet with shallots and garlic over medium heat. Add butter and cook for 1 minute or until butter is melted. Add wine and chicken stock and bring to a boil. Continue to cook until reduced by half. Remove from heat and add lemon juice. Drizzle sauce over chicken.
